Origin: Tie Guan Yin (Tie Kuan Yin) oolong tea from China has been translated for centuries as “Iron Goddess of Mercy”. The story goes that a devout farmer refurbished a small shrine to the goddess Kuan Yin, polishing her small iron statue for years. Kuan Yin came to the farmer in a dream, and told him to look for treasure behind the temple, instructing him to share it with others. The farmer awoke, and found only a small tea plant behind the temple. So he took it, farmed it, and in turn gave cuttings to his neighbors. The treasure from which the village profited was the taste of the cultivar known today as Ti Kuan Yin.

Brewing Tips & Suggestions (click here)

1 large, heaping teaspoon (or 2.5-3 grams) per 8oz cup of less than boiled water, preferably 185F or less, so as not to burn & damage these delicate leaves. Cover & steep 3-4 minutes.

Adjust the amount of tea according to your personal taste. Use more tea for a stronger brew. Use less tea for a milder flavor.

*Brewing Tip: As with all green or white tea, the water should be hot, but not boiling, scalding, or scorching. Before pouring the heated water over the leaves, first test the temperature of the water. If the water is too hot, so much so that it would scorch the delicate skin of your lips or tongue, then it will do the same to the delicate tea leaves. Instead, first pour the heated water into a cold ceramic mug, then add the leaves to the water in the mug.

Sample size pouch provides 3 - 4 servings. 1.5oz pouch provides at least 14 brewed cups.
