Origin: An organic Yunnan black tea is the base for our Bourbon Island Vanilla chosen specifically because it compliments the natural creaminess of the vanilla bean perfectly. This particular Yunnan black tea is cultivated from the high mountains of Zhenyuan in the Simao Prefecture, China. These mountains provide a thick mist that condenses the flavors of the tea giving it a medium body with delicate notes of lilac and a hint of maltiness.

The organic vanilla bean selected for this tea is a bourbon vanilla from Madagascar, a large island off the coast of Africa. It was named so because it is grown on Bourbon Island (now Réunion Island) in the Indian Ocean. The flavor actually has nothing to do with the distilled spirit of bourbon at all. Instead, Madagascar Vanilla has a creamy, sweet, velvety flavor that is famously known as the sweetest and richest of all the vanillas.

1 - 2 large teaspoons (2.5 grams) per 8oz cup of less than boiled water, preferably 200F or less.

*Brewing Tip: As with all black tea, steeping for longer times and at higher temperatures, will only activate more tannins increasing astringency and bitterness. Instead, use more tea for a stronger, bolder brew, or use less tea at lower temps for a softer, more mild flavor.
